Ferrero Rocher fans behold! With under 4 weeks until Christmas, the HLC bakers are getting into the spirit and turning one of the best parts of the season completely vegan!
Our new vegan AND gluten free Ferrero Rocher Cupcake has a rich chocolate sponge, a hazelnut chocolate spread filling and a decadent chocolate frosting, which has been rolled in chopped hazelnuts and topped with a gold holly leaf.
Our vegan and gluten free chocolate sponge recipe makes the perfect base for all kinds of chocolatey creations. You will need:
2 cups soy milk
2 tsps apple cider vinegar
1.5 cups sugar
2/3 cup vegetable oil
2 tsps vanilla extract
2 cups gluten free self raising flour
2/3 cup cocoa
1 tsp gluten free baking powder
1.5 tsps gluten free bicarbonate of soda
1/2 tsp salt
- Whisk soy milk and apple cider vinegar together in a bowl and set aside to curdle.
- Add the sugar, oil and vanilla extract and whisk together until foamy.
- In a separate bowl, sift all of the dry ingredients together, then add to the wet ingredients a little at a time, until fully combined. Dont over mix!
- Fill 18 cupcake cases 3/4 full and bake at 180 degrees for 18 minutes.
