Lemon Loaf Cake๐Ÿ‹


VEGAN REFINED SUGAR FREE LEMON LOAF SPONGE WITH SUGAR FREE STRAWBERRY TOPPING

So fluffy, moist & flavoursome!!!

Ingredients:
250g self raising flour
2tsp baking powder
200g natural sweetener such as stevia
75ml vegetable oil
250ml unsweetened almond milk
2tsp apple cider vinegar
Juice of one lemon
Zest of one lemon
Sugar free strawberry jam & fresh strawberries for topping!! ๐Ÿ“

Method:
1) mix the vinegar & milk. Itโ€™ll curdle but this is normal & correct.
2) add the lemon juice & zest.
3) add the oil & stevia (or sugar if youโ€™re not making the cake sugar free).
4) add the flour & baking powder.
5) mix with a mixer preferably to avoid lumps.
6) bake at 160ยฐC fan oven for 50 mins.
7) once cooled, spread warmed sugar free strawberry jam on top & add sliced fresh strawberries.
