4th of July Cookies with Berries

These 4th of July Cookies are made with fresh strawberries, blueberries and white chocolate chips. I wanted to make something fun for this fun summer holiday. And I wanted it to be a delightful, delicious treat to serve at your party, as well as something that’s super easy for you to bring to any party you’re invited to.

These cookies are fantastic any time — so obviously you don’t have to wait for the holiday. 😉 

Ingredients for these 4th of July Cookies


  • unsalted butter
  • granulated sugar
  • brown sugar
  • salt
  • egg
  • pure vanilla extract
  • all-purpose flour
  • baking soda
  • lemon zest
  • fresh blueberries
  • fresh strawberries
  • white chocolate chips

How to Make Them


In a large mixing bowl, combine the butter with both sugars, salt, vanilla and lemon zest. Add the egg and mix until it’s completely blended in.
Add in the flour and baking soda and mix just until it’s incorporated.

Use two tablespoons or a cookie scoop to shape the dough, dropping it onto parchment paper-lined baking sheets as you go, with at least a couple of inches between them.Balls of Strawberry-Blueberry White Chocolate Chip cookie dough on a parchment llined baking sheet.

Cover with plastic wrap and refrigerate for 30 minutes. While they’re refrigerating, preheat the oven to 350°F.
Bake until the edges are beginning to turn a golden brown, about 12 minutes. Cool and serve.

Can you make them ahead?


  • I wish I could tell you that you could make these start to finish way ahead of time, but with the fresh fruit, they are the absolute best the same day they are baked.
  • You can however, make the batter ahead of time, and keep it refrigerated for up to 24 hours. (The best way to do this is to shape them first.)
  • You can bake them in the morning for the same afternoon or evening.

Ingredients

  • ½ cup unsalted butter, softened

  • 2 tablespoons lemon zest, finely grated
  • 1 large egg
  • cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¾ cup fresh strawberries, washed and dried, cut into a small dice
  • ¾ cup fresh blueberries, washed and dried
  • ½ cup white chocolate chips

Instructions

  • Prep pans. Line two baking sheets with parchment paper.
  • Make Batter. In a large mixing bowl, combine the butter with both sugars, salt, vanilla and lemon zest. Stir until the mixture is smooth. Add in the egg and mix until it's completely blended in.
    Add in the flour and baking soda and mix just until it's incorporated.
    Fold in the strawberries, blueberries and white chocolate.
  • Shape. Use two tablespoons or a 1¼ inch cookie scoop to shape the dough, dropping it onto the lined baking sheets as you go, with at least a couple of inches between each one.
  • Refrigerate. Cover with plastic wrap and refrigerate for 30 minutes.
    About halfway into the refrigeration time, preheat the oven to 350°F.
  • Bake. Bake until the edges are beginning to turn a golden brown, about 12 minutes. Let them cool for at least 20 minutes on the baking sheet, and then transfer them to a cooling rack, or a plate.
