A 30 minute meal that can help stretch your grocery budget thanks to the black beans that bulk up the protein.
I love this meal because its quicks, affordable, and a healthier alternative. Baking reduces the the fat and the black beans provide protein and fiber. Instead of using 1 lb of ground beef, this recipe calls for a 1/2 lb mixed with a can of black beans. This makes it more filling at a more affordable price! I used the rest of the ground beef for a spaghetti sauce the day before.
This recipe requires essentially 5 ingredients not counting the toppings. The simplicity makes it a great option for a quick week night meal.
Baked Beef and Black Bean Tostadas
6 corn tortillas
1 can reduced sodium black beans
1/2 lb grass fed ground beef
1/2-1 packet taco seasoning
Non stick spray- I like olive oil
Toppings- guacamole, salsa, Mexican blend cheese, feta cheese
Preheat oven to 425 F. Like a baking sheet with foil. Spray both sides of each corn tortilla with non stick cooking spray. Spread tortillas evenly on sheet
Bake for 5 minutes as flip on the other side
While tortillas bake, brown the beef in the skillet. Drain the black beans and add to the skillet and stir to combine. Mix in taco seasoning. Use as much as you like for flavor.
Check tortillas. Once they are golden and crisp remove from over. It takes about 8-12 minutes. Divide beef and bean mixture over each tortilla and sprinkle with the shredded Mexican blend cheese.
Bake 1 minute to melt cheese. Top with additional toppings as desired.
