Cauliflower Tacos

I have thoroughly enjoyed this meal tonight. My experimental coating has fallen somewhere between an Indian pakora and the Mexican taco.

Cut a head of cauliflower into small florets and blanche in a bowl of boiling water for 5 minutes then drain.

Mix together a pinch of ground dried fenugreek leaves, 1 tsp chaat masala, 1/2 tsp garam masala, 1/2 tsp garlic granules, 1 tbsp ginger purée, juice of 1 lime, 6 tbsp gram flour and enough water to make a thick-ish batter.

Add the drained cauliflower pieces to the batter and stir to ensure fully coated.

Shallow fry in batches until golden

I served in mini flour tortillas with shredded lettuce, diced tomato and spring onion salsa dressed in 1 tbsp lime juice and 1 tsp chilli jam/sauce and shop bought guacamole.
