The best veggie burger you’ll ever make, made from a tasty blend of farro, white beans, garlic, and barbecue sauce. This veggie burger is firm, won’t crumble, and is a flavorful plant based patty option.

Farro and White Bean Veggie Burger

After years of cooking other people’s veggie burger recipes and never being fully satisfied on texture or flavor, I finally took matters into my own hands and created what I believe to be the best veggie burger!

Veggie burgers can either crumble or be too mushy when you bite into them and they can be full of breadcrumbs and other non nourishing ingredients. And as for flavor, veggie burgers can be very underwhelming. But not this one!

Farro and White Bean Veggie Burger

The farro is a hearty, nutritious grain that helps bind the burger together and offers a firmness to the patty. The white beans and oat flour give the veggie burger a burst of protein and the barbecue sauce makes the burger seem, well, meaty.

These burgers can also be grilled on a grill – they’re that firm!

A few notes on substitutes:

  • If you don’t have farro, brown rice will work in a pinch. Don’t use quinoa, the burger won’t be firm enough.
  • You can use black beans or pinto beans as a substitute for white beans, if you want a different flavor. If you do, add some chili powder for a more Mexican flare!
  • Don’t skimp on the cumin – it adds a much needed flavor.

These burgers are shown with a “special sauce”, burger-style, but you can use whatever you’d like – more barbecue sauce, guacamole, ketchup, or your favorite burger sauce.

Farro and White Bean Veggie Burger

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove, minced
  • ½ cup diced onion
  • 1 (15oz) can cannellini beans, drained and rinsed
  • 1 cup cooked farro
  • ½ cup oat flour (if you have oats, just pulse in a food processor until flour-like!)
  • 1 tablespoon cumin
  • 2 tablespoons mayonnaise (can be vegan!)
  • 2 tablespoons barbecue sauce
  • to serve: sliced avocado, lettuce, cheese, etc

Instructions

  1. Heat the oil in a medium skillet over medium heat. Once oil is shimmering, add the onions and garlic and cook until onions are soft and translucent, about 5 minutes. Remove from heat and set aside.
  2. In a large mixing bowl, add the white beans and mash with the back of a fork until mostly mashed. Add the cooked farro, cooked onion mixture, oat flour, cumin, mayonnaise, and BBQ sauce.
  3. Form the burgers into patties (about ½ cup per burger) and place on a baking tray lined with parchment paper. Once burgers are formed, you can bake them in the oven at 375 degrees for 20 minutes or cook on the stovetop with olive oil, about 5 minutes per side.
  4. Serve on buns with desired toppings and drizzle with more BBQ sauce.
