Guilt-free Loaded Layered Taco Bake

Our dear neighbor from Kansas City used to make something similar to this, and I wanted to make my own super loaded take on it. You can add or omit items as you wish! This stuff is seriously so good, and the cauliflower rice makes it low carb. We eat it almost twice a week. This recipe is for more of a 2-4 person serving size, but if you have a bigger family or want leftovers (these make GREAT leftovers), double the recipe for cauliflower rice + meat!

  • 1 lb ground turkey (can use ground chicken or ground beef)
  • 1 large bag of frozen cauliflower rice
  • 3/4 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup pico de Gallo
  • 1 1/4 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 1/2 cups mexican blend or cheddar cheese, separated
  • Taco sauce (choose the heat level of your liking)
  • 1 bag liquid taco skillet seasoning, OR 1 packet taco seasoning, 1 can tomato paste, and water
  • Optional add-ons: Olives, avocado, guacamole, onion, cilantro, anything you would normally add to tacos
  1. Preheat oven to 375 degrees, and grease a 9×13 pan.
  2. In a large pan, heat up some olive oil over medium high heat. Add frozen cauliflower. Season to taste (not too much as you will be using taco seasoning) and pan-fry until golden brown in color. Layer evenly in the bottom of your pan.
  3. Brown ground turkey and drain as needed. Add your choice of taco seasoning and mix well, allow to simmer for 5 minutes or so to marinate the flavors. Layer the taco meat on the top of the rice.
  4. Put half of your cheese in a layer on top of your rice and meat. Bake in oven for 10-15 minutes until cheese is melted well.
  5. Once done baking, remove from oven.
  6. Spread your sour cream on top of your layer of cheese. You can use more or less depending on your taste. Then, add your salsa and pico de gallo and spread slightly to even. You can also add guacamole here if you’d like.
  7. Top all of the layers off with your shredded lettuce. Then, sprinkle around your tomatoes, extra cheese, and any other additional ingredients like olives or onion you prefer. Top with remaining cheese (it should be cold cheese)
  8. Drizzle your taco sauce along the top. Serve immediately.
