#givepeasachance. My old friend, chef Jean-Georges, shared this recipe for guacamole that is easy-peasy (sorry). You can adjust the spices and lime juice to your taste. The rest of the book is a delightful memoir recounting his life and story about becoming a chef and restaurateur. It is a must-read for aspiring cooks and armchair foodies.

Heres one of my favorite recipes from ABC Cocina. The important ratio to remember is that you want two parts avocado and one part chopped peas. Youll want to use about a half cup of peas, chopped with one roasted jalapeo and a big pinch of cilantro leaves, for each avocado*. As a rule, season higher with acid (lime juice) and heat (jalapeo) than you think you should. And dont leave out the sunflower seeds.
Combine the following in a food processor:
Peas (fresh or thawed from frozen), blanched and shocked
Jalapeos , charred over a gas flame or under a broiler, stems and skin removed
Cilantro
Pulse until everything is combined and the peas are coarsely chopped.
Put your avocado into a bowl and add half as much pea mixture as you have avocado.
Mash and mix to combine.
Season with lime juice and salt. Taste and taste again, adding more lime and salt as necessary.
Garnish with the following:
Chopped jalapeo
Thinly sliced scallion
Whole peas (blanched and shocked)
Baby cilantro leaves (or cilantro chiffonade)
Sunflower seeds
*Makes two portions for each avocado
